For the buckwheat dishes served by Buckwheat Flower Scent, bitter buckwheat, not regular buckwheat, is mainly used. Bitter buckwheat contains dozens or 100 times more rutin than regular buckwheat. Rutin has antioxidant and hemostatic properties and it is useful for lifestyle diseases such as high blood pressure and diabetes. For the reason, bitter buckwheat has been attracting attention for its medicinal value rather than as a food ingredient for a long time. However, when it is used as food, the grain is boiled with steam to remove bitterness after threshing. Therefore, the buckwheat does not have a bitter taste as the name suggests.
